Recipe Modification to Improve the
Nutritional Profile,

or Alter Specific Nutrients

 

Re-creating a menu item does not have to decrease the quality or taste of the item.  In fact, often times, customers appreciate other options when dining out.  

Modification of recipes can be made to improve the nutrient content.  For example,  a high fat recipe can be re-formatted by reducing the oil used in the recipe, using a lower percentage fat meat, or substituting a high fat sauce or dressing for a more healthy option. 

Increasing or decreasing other specific nutrients such as carbohydrates, protein, trans fat, cholesterol, and fiber can also be made.

When a recipe has a "face lift", considerations are made based on the current food items that are ordered, kitchen restrictions, budget, and equipment used.

Recipe modification can be done for both adult and kid's menus.

Heart healthy recipes and lower sodium recipes can be developed or an existing recipe modified to meet the American Heart Association Guidelines or any other guidelines you have developed.  We can offer advise according to your company's  or restaurant's goals and marketing endeavors.  We can help you develop recipes that follow the latest trends, such as more whole foods, real whole grain products (not just "brown refined grains"), zero trans fats and limited additives.
